On the Philippine culinary landscape, pork predominates, and for Filipinos no party is complete without lechon , or whole, spit-roasted pig. The dish is paid tribute at an annual festival in June, "Parada ng Lechon" (Procession of the Lechon) in Balayan in Batangas province, south of Manila . In La Loma, a district on the Manila-Quezon City border in the Metro Manila area, entire streets are given over to the delicacy, with row after row of bronzed specimens displayed in front of lechon restaurants and takeout shops. The word lechon actually refers to the cooking technique; cows and goats are also spit-roasted, but pig is so ubiquitous that the term has come to imply pork by default.
